Bubble & Squeak
A History (Sort of)
So for all you under 25s and non-English folk (We know who you are…Don't think that we don’t see you whispering ‘What’s Bubble & Squeak?’ to your mate as you walk by!)
Bubble & Squeak is an English dish made with the leftover vegetables from a roast dinner. The main ingredients are usually potato and cabbage plus any other veg, mashed and fried together until the mixture is brown on all sides. Traditionally, you’ll find it served as part of a cooked English breakfast, on Boxing Day, or simply on a Monday morning in many homes.
Where we started
Bubble& was created by husband-and-wife team Rupert Smith and Marita Lietz in 2013.
Rupert was a head chef in a gastropub and noticed that Bubble & Squeak was a big seller, yet was marketed as a leftover dish. He had a lightbulb moment: imagining that Bubble & Squeak could be as versatile as pizza and pasta.
Both Rupert and Marita gave up full-time jobs to open a Bubble& food stall with the aim of revolutionising this British classic and putting it firmly back on the menu.

In this episode from January 2015 - Luxury Leftovers - James made some delicious meals with leftover food that tasted even better the second time around with the help of Bubble&.
We have been recognised
We were also named as one of the four finalists in the South East Region for the Great British Entrepreneur Awards’ Family Business Entrepreneur of the Year 2020.
We won investment
Million Pound Menu
A key investor on the first series of Million Pound Menu was Indian-born, British based chef, restaurateur, and television personality Atul Kochhar.

Bubble& Cafe Bar
Opened in Spring 2019 this fun, laid-back residency featured favourites from the duo’s Bubble & Squeak range including Bubble& Classic - a traditional Bubble & Squeak with soft poached free-range egg, smoked streaky bacon and hollandaise sauce - and also Bubble& Pork Belly - slow roast pork belly, cajun bean stew, green chilli salsa verde and crackling.

Our year-long residency with Atul Kochhar at Hawkyns - an amazing opportunity and such fun too - came to a natural end in Spring 2020, and we then started the process to write the next chapter in the Bubble& story, which will see the opening of an independent site in Hampshire where we will be dishing up lots of Bubble& goodness from 2021.
